New potato and asparagus frittata – BBC Good Food Recipe
I made this frittata at the weekend using my new cast iron skillet. It was a perfect weekend brunch and I plan on making it again, maybe trying with halved cherry tomatoes as well as the asparagus and potatoes.
The recipe says to move directly under the grill once the eggs are added to the pan, but I first cooked it in a low heat on the hob, to firm up the underside of the frittata. This way, it held its shape when removed from the skillet at the table.
