Baby Food: summery apricot and strawberry purée
Makes 2 baby sized portions
4 large strawberries
A little water
Peel half a carrot and cut into small pieces. Allow it to boil in a little water, in a small pot for around three minutes.
Chop the apricots up and add to the pot.
Dehusk the strawberries and cut into small piece, then add to the pot.
Reduce the heat to allow the mixture to simmer for a couple of minutes.
If you want a lumpy texture, perhaps for an older baby or young toddler, you can remove the purée and serve once cooled.
If your baby prefers a smoother purée remove from the heat and blend with a hand blender or food processor until smooth.
Allow to cool, then serve or store in the fridge, where it should be used within 48 hours.
