Jack Monroe’s Blushing Berry and Banana Bread
I wanted to make a sweet dairy free loaf or cake over the weekend, and after looking at some recipes, chose this one for ‘Blushing Berry and Banana Bread’ by Jack Monroe. I have made lots of Jack’s recipes over the years, so was looking forward to giving this one a try.

It was easy to make and turned out very tasty. I particularly liked how the mixture turned a pinky purple colour when I added the berries. Unfortunately, the colour doesn’t hold in the loaf once cooked.
My oven is fan assisted and a bit temperamental, so the first time I made this it came out a little well fired after an hour (but my family were still happy to eat it). The second time I made the loaf, I baked it for 45 minutes, then turned the heat down for a further 15, checking every 5 minutes or so, and this seemed to do the trick.
I stored what was left in a cake tin, and this help the loaf keep its texture nice and moist, without drying out.
Edited to add: The original recipe seems to have disappeared from Jack’s website, but here is a similar one for Wholesome Banana Bread (also vegan)
