Whipped Guacamole and Crispy Tortilla Chips

4 as a snack

* 2 wholemeal tortillas

* 2 avocados

*Juice of 1/2 a small lime

* A little coarse salt (I use pink himalayan rock salt)

* 1 tbsp sunflower oil



Destone the avocados, remove the flesh, and mash it into a bowl. Add the lime juice and salt and ‘whip’ the mixture with a fork until smooth and light. Set to one side.

Cut the wholemeal tortillas into triangles, using a pair of scissors. Put a dash of oil in a high sided frying pan, and allow it to get hot. When the oil is hot, add a few triangles, not so many that they overlap in the pan. When the begin to turn golden, turn them over with tongs , then place on a plate with a towel or kitchen roll underneath to catch any excess oil. Repeat until you’ve fried all the triangles.

Serve the guacamole and tortilla chips alongside each other as a snack, or to accompany a main meal.
